Easy and Delicious Mushroom Pizza

Easy mushroom pizza recipeIn the interest of bringing you ridiculously easy recipes, here’s one for an easy mushroom pizza.

The ease here comes from using a pre-baked pizza crust. Without any dough to make or roll, your prep time is shortened. You can use white, wheat, gluten-free, or whatever you desire.

Of course, if you want to make your own crust, that’s ok too! It’ll no doubt taste delicious.

There are so many ways to alter this recipe. Add or subtract any ingredient you need to make it your favorite. Just don’t forget the mushrooms!

Recommended mushrooms: shiitake, morel, oyster, portobello slices, or even cremini or white buttons from the grocery store.

Ingredients:

  • 2 cups trimmed and thinly sliced mushrooms
  • 1 (12 inch) pre-baked pizza crust
  • 3/4 cup tomato or pizza sauce
  • 1 cup rinsed spinach, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 8 oz grated cheese (mozzarella, parmesan, whatever you like)

Preheat oven to 425 degrees.

Heat the oil in a low-sided saucepan or skillet on medium-high heat. Add garlic and cook for one minute.

Add the mushrooms and cook until they become soft and a darker color, usually around 5 to 7 minutes.

Spread the sauce across the shell of the pizza, leaving some room at the edges for the crust.

Cover the pizza with grated cheese.

Add the mushroom and garlic mix along with the spinach pieces.

Put the pizza straight on the oven grate or on a baking sheet. Cook 10 to 12 minutes.

 

Variations:

  • Saute the mushrooms with 2 minced shallots or 1/2 of a minced onion.
  • Add pepperoni, olives, sausage, peppers, banana peppers, or anything else you can think of for a topping.
  • Sprinkle on some of your favorite herb such as rosemary or parsley.
